This recipe is based on the Whole30® recipe.  I wanted you to be able to make in a day or two in advance to let the chicken marinate in its juice for extra mucho flavor!

Minced Chicken with Sun Dried Tomatoes and Basil.

I often get the complaint that people don’t have enough time to cook healthy meals.

That is why I decided to start a series of videos about quick, delicious and easy to make meals. 

This minced chicken recipe (organic please!) is even better a few days after it’s been cooked.  All the flavors integrate the chicken strips along with the sun dried tomatoes.  It makes a real explosion of flavors in your mouth.

How to Open a Coconut

Fresh coconut is absolutely delicious!  Some are intimidated by the work involved in opening one.  That is why I created this short video showing you how to open a coconut.

We decided to use a corkscrew opener and a big knife in the video.  But you could also use a screwdriver and a hammer if you have one.

Another way of doing it is by changing the temperature of the coconut by putting in the oven for 10 minutes at 375ºF.  In the same train of thought, putting it in the freezer for 10 minutes will loosen the meat from the shell.

There is a recipe I’ve been wanting to try for a while.  It’s showing how to make banana bread that doesn’t use much flour but a lot of bananas.

So I decided to test it with the addition of pecans.  I also used extra virgin organic coconut oil instead of clarified butter.

Hot Chocolate

My paleo version is healthy because I’m using unsweetened cocoa powder, full fat coconut milk and a bit of coconut sugar (no refined sugar).

Full of antioxidant and healthy fats, here is a drink that you can enjoy without guilt for once!

Chocolate mousse is normally made with eggs, cream or butter.  This paleo version is made with coconut milk.
