Healthy Dessert


Feeling guilty when eating dessert?  Well, you can start feeling good right now, as this dessert recipe is 100% nutritious!

It’s actually my 17-year old daughter that gave me the idea to create this 2-part dessert.  The dark chocolate we use in this recipe is organic and has 70% cocoa content.  Everyone can make this dessert!

I find it absolutely inspiring to meet people that are interested in improving the way they feed themselves.  People that want to know more, educate themselves and think differently.

Because it uses paleo-friendly ingredients, this dessert is healthy and will satisfy your sweet tooth.

My 16-year old daughter made it herself.  It’s so easy.  She used a regular mug and baked it in the microwave for 3 minutes.

Gingerbread Cookies

I always treasure the time I get to spend with my daughter in the kitchen.  She’s my Cookie Queen!  She knows how to switch ingredients when something is missing.  

Over the years, trying to find the perfect combinations, she has made mistakes while cooking them (after all, isn’t that how you learn how to cook?). 


Vanilla Maple Chia Pudding

Chia Pudding_560_292A good friend shared this pudding recipe with me a few days ago.  It needs to be made a day ahead of time in order to get to the desired texture.  It is so easy and quick to make, you will want to try it right away. 

Now, I always have a jar of that healthy dessert in my fridge for afternoon snacks or to serve with fruits after dinner and to finish off a great meal with a sweet twist.

You can adjust the quantity of almond milk depending on which additional ingredients you use.  You need to consider if those will add liquid to your mixture or not.

Chia seeds are best-known for their great content in Omega-3 fatty acids, fiber, calcium, magnesium, iron and their high-quality protein content.  You can feel good about eating this delicious and healthy dessert!  Enjoy!

Chocolate mousse is normally made with eggs, cream or butter.  This paleo version is made with coconut milk.
