Why Energy Balls Are So Great

Picture this…it’s Thursday, got up at 6h30 am, had a nice breakfast (proteins-vegetables-healthy fats) and now, well, hunger is starting to kick in.

What can I eat?  It’s too early to have lunch.

I just wish there was something healthy and ready to eat that would keep me full for an hour, or until lunchtime.

The answer?  Energy balls!

Almond Meal or Flour

Comment Faire du Lait d'AmandesIf you make your own almond milk like me, you are probably wondering what to do with the pulp you get after you filter your milk.

I had 1 1/2 cup of almond meal.


How did I get almond meal?  Once you filter your milk, put the leftover pulp on a baking sheet in the oven at 170ºF  for about 3 hours (depending on your oven) to eliminate humidity.  Put it back in your blender to make ready to use almond meal.


Since my almonds had soaked for 8 hours, I knew it did not contain any phytic acid.  It would not keep me from absorbing the other ingredient’s nutrients (iron-zinc-calcium).

The execution of this recipe is easy, all you need is a blender and your hand palms to roll the balls.

Ingredients
  1. 1 cup almond meal or flour
  2. 1/2 cup unsweetened coconut flakes
  3. 2 tablespoon cocoa podwer
  4. 5 pitted dates
  5. 1 handful unsalted raw almonds
  6. 4 to 5 tablespoon extra virgin organic coconut oil
  7. 1 teaspoon vanilla extract
  8. 1/2 teaspoon sea or Himalayan salt
  9. 1/2 cup shelled organic hemp seeds
Instructions
  1. Place all ingredients in a blender, exception made for the hemp seeds and the 5th tablespoon of coconut oil.
  2. Pulse until you get a grainy but still pretty smooth texture.
  3. Pinch some of the mix between your fingers and see if it sticks together. If not, add the 5th tablespoon of coconut oil, pulse again.
  4. Take 2 tablespoons at a time and roll between your palms to make some nice balls.
  5. You can freeze them for 5 or 10 minutes to make them firmer.
  6. Roll the balls in the hemp seeds to cover them well.
  7. Keep in a sealed container in the fridge for 1 1/2 week (if they last that long!)
Notes
  1. This recipe is ideal for left-over almond meal from making almond milk.
